Sylvain Bitton’s very vibrant personality and innate ability to entertain with style have established him as one of LA’s premier nightlife personalities. Sylvain is originally from San Francisco, and had a multi-cultural upbringing from his French Moroccan parents, who were in the restaurant industry. Members of his immediate and extended family either owned or managed some of Northern California’s most distinctive and unforgettable restaurants-one being the world Renowned “Robert’s”.
At 18, Bitton traded the city for wine country, accepting a position in the kitchen of Elaine Bell, Sonoma County’s premier caterer, and the Consulting Culinary Director for Sterling Vineyards. But the laid-back wine country lifestyle moved too slowly for Sylvain, and he subsequently moved south to Los Angeles in 2001 in order to study Communications at California State University of Northridge.
After college, Sylvain worked at Saks Fifth Avenue in Beverly Hills, where he assembled an extensive and loyal client base composed of many of the city’s most wealthy, powerful and famous citizens. With the relationships built throughout his career, Sylvain was able to raise capital for the revitalization of Les Deux in Hollywood.
Today, Les Deux reigns as one of the longest standing hotspots on the Hollywood nightlife map, serving up a sexy and sophisticated clientele. Sylvain’s next project with the Dolce Group, after Les Deux, was Ketchup. Sylvain conceptualized and co-created Ketchup with partners Lonnie Moore, Mike Malin & JT Torregiani. Ketchup is a modern American grill on Sunset Boulevard and the restaurant’s youthful appeal and upscale grill concept is adored by all ages.
Sylvain’s passion for the restaurant and nightlife industry, personal style and charisma make the Dolce Group spots sizzle with energy, and will undoubtedly keep this power on the scene for years to come.
